All the originals, each of which was first published as a series of novelettes in SF magazines before being combined into novels. They're dated now, and late in his life Asimov reputiated his basic idea in those novels--he came to realize just how important nature is.

I've read all the Foundation books written BY and only by Asimov. I got bored one day and bought the Thoudand Year Plan, which is nothing more then an abridged Foundation. As of now, I'm re-reading Foundation and Earth, and I'll go and read Prelude to Foundation once I'm done. (I forgot where it was when I started rereading the series. I usually start with it, but oh well.) I've read Caves of Steel, but I'll be damned if I can find the other books of that universe.

Read them? Hell, I wrote a sequel describing the end of the thousand-year span.  (Strictly fan-fic, of course.)  Apparently, it was good enough that, five years after I wrote it, someone gave it its own subdomain:  http://imperialconference.blogspot.com/

Once upon a time, when I entertained dreams of becoming a professional writer, I considered submitting this short story through an agent to the Asimov Estate for consideration.  Then I simply got too busy doing what I loved doing.

I've read all the official stories, including those by the Killer Bees (was I disappointed to find out they only fleshed out backstory), and they're pretty high on my all-time classics list.
